Hidden beneath the shoulder, this thin, fan-shaped muscle delivers an intensity that rivals a premium beef steak, but with the signature sweetness and nuttiness that come from an acorn-influenced diet. When cooked properly, secreto becomes crispy on the outside and incredibly juicy within.
To prepare, season simply with sea salt and sear over high heat for a short cook—just like a steak. Aim for medium-rare to medium to preserve tenderness and prevent drying. This cut comes from Finca Los Helechales, Fermín’s own estate—over 200 acres of holm oak woodlands and the first farm in Salamanca dedicated to 100% genetically selected Ibérico pigs. Raised without antibiotics or growth accelerators, the animals roam freely, foraging naturally, which produces superior muscle quality and intramuscular fat. Every step, from breeding to curing and butchering at facilities in La Alberca and Tamames, follows traditional, sustainable practices that preserve the integrity of truly authentic Ibérico pork.
