Unlike leaner cuts, secreto becomes crisp at the edges while staying tender and succulent inside, making it a favorite of chefs for quick, high-heat cooking.
Season simply with sea salt and sear over medium-high heat on a grill or cast-iron pan, cooking only to medium-rare or medium to preserve its tenderness. This cut comes exclusively from Finca Los Helechales, Fermín’s own Ibérico estate in Salamanca—the first farm in the region dedicated to 100% genetically selected Ibérico pigs. The animals roam freely across more than 200 acres of holm oak groves and are raised without antibiotics or growth-promoting additives. All processing takes place under Fermín’s control in La Alberca and Tamames, ensuring authentic, traditional, and sustainable Ibérico pork from farm to table.
