Lowry Hill Provisions, founded by Erik Sather in 2023, brings a pork-forward approach to salami from its base in Northeast Minneapolis. With a commitment to using clean, heritage pork that’s antibiotic- and hormone-free, they handcraft salami that’s low in acidity, delicately coarse in texture, and bursting with thoughtfully composed flavors. Each salami is tied and trimmed by hand, ensuring standout quality and character.
This coarsely-ground salami brings the heat! It starts with regionally-sourced pork, and is flavored with chili flakes, fresh garlic, smoked paprika, and a splash of white wine. Serve it on warm flatbread, use it as a pizza topping in place of pepperoni, or toss it in spaghetti with fresh parmesan. Rinse and peel casing prior to eating.
