Le Gruyère has been made the same way since the 12th century, using milk from cows that graze on fresh pasture in summer and hay in winter. Each wheel is crafted in copper vats for distinctive character and slowly matured in the high humidity and mineral-rich air of the Kaltbach Cave — an ancient sandstone labyrinth that naturally maintains the perfect aging climate. The result is a cheese with remarkable depth, featuring notes of candied walnut, dried fruit, and warm spice, ideal for fondue, gratins, and gourmet cheese boards.
