For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.

Emmi Kaltbach Le Gruyère AOP Cave-Aged 12 Months is the definition of Swiss cheese craftsmanship. Aged in natural sandstone caves in the Alpine Valley of Switzerland, this Gruyère develops a deep, complex profile marked by fruity tanginess, roasted nut tones, and the occasional crunch of salt crystals. Its firm yet creamy texture and light brown rind come from 12 months of careful ripening under the watchful eye of Emmi’s Cavemasters, who balance moisture and airflow.

Le Gruyère has been made the same way since the 12th century, using milk from cows that graze on fresh pasture in summer and hay in winter. Each wheel is crafted in copper vats for distinctive character and slowly matured in the high humidity and mineral-rich air of the Kaltbach Cave — an ancient sandstone labyrinth that naturally maintains the perfect aging climate. The result is a cheese with remarkable depth, featuring notes of candied walnut, dried fruit, and warm spice, ideal for fondue, gratins, and gourmet cheese boards.
