Fresh stracciatella cheese is a luxurious Italian fresh cheese made using a traditional stretching and shredding technique. Delicate strands of mozzarella curd — known as straccia, or “little shreds”—are gently pulled and then folded into rich cream, creating an irresistibly soft, spoonable texture. Originating in the Puglia region of southern Italy, stracciatella is the heart and soul of burrata, prized on its own for its freshness and purity. Because of its high moisture content and delicate structure, it is best enjoyed promptly while still fresh, when its creamy texture and subtle flavors are at their peak.
Stracciatella shines when served simply. Spoon it over warm grilled bread, finish pizzas or flatbreads just out of the oven, or pair it with ripe tomatoes, roasted vegetables, or prosciutto. It’s also excellent dolloped onto pasta, folded into risotto, or served alongside grilled seafood, where its richness adds contrast without heaviness.
