Coulis is a thin puree of fruit or vegetable. Fauchon of Paris makes coulis in a traditional way, cooking in small batches in copper cauldrons. This thin French sauce is easily pourable over sweet and savory dishes. Try the apricot coulis with pork or lamb, the raspberry coulis with venison, duck or beef or the strawberry with pork. These 3 sauces are perfect for desserts. They are all wonderful toppings for ice cream, yogurt, crepes, waffles, French toast, cakes, pies and Panna Cotta. Perfect for smoothies. Try blending with EVOO to create a summery vinaigrette. Great for drizzling over your favorite cheeses such as bries, blues and chevres.
