Delpeyrat French Bayonne Ham is an authentic Jambon de Bayonne IGP, produced in the Adour River Basin of southwestern France. This whole, boneless ham, weighing approximately 13 pounds, is crafted using only pork and salt, following strict traditional methods. Each ham is hand-salted with mineral-rich salt from Salies-de-Béarn, then slowly dried and aged in the cool, humid climate that defines the region.
Unlike many other cured hams, Bayonne ham is dried at colder temperatures, resulting in a soft, supple texture and delicate mouthfeel. After a minimum of 12 months of careful aging, it develops a refined sweetness, subtle hazelnut notes, and a bright pink interior. The flavor is gently savory with restrained saltiness, allowing its natural character to shine. Free from GMOs, nitrates, nitrites, preservatives, and gluten, this ham reflects both purity of ingredients and meticulous craftsmanship.
