Fregula Sarda is one of the oldest typical Sardinian pasta that takes shape by wetting with water the semolina contained in a terracotta container (the characteristic "scivedda") and subjecting it to the hands with a circular movement until you obtain small balls of pasta from the shape irregular. The small balls were differentiated into small, medium, large, and then roasted in the oven to give it the browning and the characteristic flavor.

There are three different kinds of "Is Malloreddus" available for the US Market which include: Medi (semolina wheat); S.E. 10 (combination of semolina wheat and saffron) and 4 flavors (combination of semolina wheat, saffron, spinach and tomatoes). "Sa Fregula" is a sphere shaped pasta toasted in an oven where they assume their typical light brown color. Both "Is Malloreddus" and "Sa Fregula" contain no preservatives.
