Taggiasca is an olive variety which only grows in Liguria on the western Riviera in Italy. This prized oil is golden yellow with a soft aroma, with flavors of dried almonds, ripe fruit and fresh flowers. It is fluid and sweet with a round, delicate finish. This is the oil to use when you want a milder flavor that will not overpower the other ingredients in your recipe. We generally use this delicate monovarietal oil to finish dishes. Excellent with salad, vegetables and delicate, refined dishes. Drizzle over seafood and regional pastas. The perfect oil for recreating a summery Ligurian classic, Trenette al Pesto all Genovese, or a wintry walnut pesto.
This area in western Liguria, is characterized by their typical stone walls which for centuries have had the job of holding together the terraces so that the land does not slide down to the sea. Taggiasca olive trees are planted on these terraces allowing the salty Mediterranean Sea breezes to reach the trees. The trees of this unique microclimate produce a perfect little olive that is fresh and fruity with an almond finish. These diminutive olives produce a uniquely delicate Italian oil.
