Époisses Berthaut is a renowned washed-rind cow’s milk cheese from Burgundy, France, crafted by Fromagerie Berthaut according to time-honored regional methods. During maturation, the rind is regularly washed with Marc de Bourgogne, encouraging the development of its signature burnished orange exterior and supple, glossy surface. As it ages, the interior transforms from firm and creamy to luxuriously soft and spoonable, offering a dramatic expression of Burgundian terroir.
The aroma is bold and unmistakable, yet the flavor is surprisingly balanced and nuanced.
