A "split" pea is a pea that has been dried, peeled and split in half. The split actually happens naturally once the pea dries out, and the advantage is that it requires a lot less cooking than a regular whole pea. You'll find green split peas used most commonly in soup, as they are hearty and a great source of protein and fiber. Use it in split pea soup with ham and any other recipe that calls for split peas. Split peas do not require soaking, just rinsing.
