Known in China as
haidai, Dried Kelp is a seaweed. It grows in underwater forests in the shallow parts of the ocean. Shirakiku's generous helping of Dashi Kombu comes in sheets. This umami flavored seaweed has a mild, briny flavor. It contains glutamic acid (the basis of monosodium glutamate, or MSG), which enhances flavor of just about everything and tenderizes proteins. These large sheets are perfect for wrapping around fish and meats. You can also use in broths, stews, beans and salads. Roast it to use as a condiment.
The fine white powder on these sheets is sea salt.
