Based in Taketoyo, Aichi Prefecture, Ito Shoten is a 200-year-old tamari and miso maker run by by the ninth and eleventh generations. Using locally grown whole soybeans and time-honored techniques, they age their miso for three years in massive cedar barrels up to 200 years old, weighed down by river stones. While many see tamari as simply gluten-free soy sauce, true tamari — like Ito Shoten’s — is the rich liquid pressed from aged miso, offering deep, complex flavor that reflects the region’s tradition of dark, robust miso.
Naturally gluten-free, tamari is prized for its deep umami and balanced complexity. It’s perfect for seasoning stir-fries, dipping sushi and sashimi, enriching marinades, or drizzling over rice and vegetables.
