Each tiny square is utterly intense, with complex and wild fruit flavors of grape and lime. French Broad uses a combo of fair trade, South American beans in their no-holds-barred bar, which are individually roasted and refined, before being blended in a conche. And since there’s no sugar added, the chocolate’s natural sweetness and gentle acidity is really allowed to shine. The company may operate out of Asheville, North Carolina, but they’ve left their heart and soul in Costa Rica, where the founders first purchased an abandoned cocoa plantation, operated a dessert shop, and began experimenting with bean-to-bar recipes.
