This stunning Coppa Piacentina from Mitica starts with pigs born and bred in the regions of Emilia Romagna and Lombardia. It’s coated with salt and seasonings including black pepper, cloves, and nutmeg before being stuffed into natural casing, hand-tied, and aged in caves for six months.
