After 24 months, the texture becomes firmer and more crystalline, with a dense, slightly crumbly structure that breaks into fine granules. The flavor is rich and layered, offering pronounced notes of toasted nuts, caramel, and browned butter, alongside hints of dried fruit and a savory depth that lingers on the palate. Compared to younger Comté, this aged version is more concentrated, with greater intensity and complexity.
