24 month Comté St. Antoine is a deeply expressive version of one of France’s most iconic mountain cheeses. Produced in the Jura region from raw cow’s milk and matured in the historic Fort Saint Antoine cellars, this Comté develops remarkable complexity through extended aging and expert affinage.

After 24 months, the texture becomes firmer and more crystalline, with a dense, slightly crumbly structure that breaks into fine granules. The flavor is rich and layered, offering pronounced notes of toasted nuts, caramel, and browned butter, alongside hints of dried fruit and a savory depth that lingers on the palate. Compared to younger Comté, this aged version is more concentrated, with greater intensity and complexity.

Carefully aged in controlled conditions, this Comté showcases the full potential of long maturation. It is ideal for cheese boards, where its depth can be appreciated on its own, or shaved into dishes to add bold, nutty character.

  • Pairings: Vin Jaune, aged Chardonnay, Champagne, or a structured Pinot Noir.
