Comté aged 5 months is a celebrated French mountain cheese made from raw cow’s milk in the Jura region of eastern France. Each wheel is crafted in small village dairies called fruitières using milk from Montbéliarde and Simmental cows that graze on the lush Alpine pastures. After pressing and salting, the cheese is aged in cool, humid caves where it develops its signature aroma and smooth, pale-golden paste.
At five months, Comté has a supple, creamy texture and a mellow, buttery flavor accented by notes of toasted hazelnut and sweet cream. Its younger age means it’s milder and more elastic than older versions, making it perfect for melting into fondue, grating over vegetables, or enjoying as a table cheese with crusty bread and fruit. Its balance of sweetness and salt creates a versatile cheese suited for both cooking and snacking.
