A unique chorizo that is made with hand-diced chunks of lean pork loin. Cured overnight to reduce its moisture, the mixture is then tightly packed into natural, Portuguese net-like casings and air-dried for three months.
This type of sausage originated in Old Castille, around Soria. Resembling a lean pork loin, Chorizo Soria is gently flavored with paprika, garlic, sea salt and additional spices. It has a concentrated meaty taste but is less paprika/garlic forward than more typical chorizos.
Simply slice thinly and eat in sandwiches.
