For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.

Note: Please join our efforts to be mindful of our environment and extend the life-cycle of our packaging, by recycling your shipping box, Tempguard liner, and kraft fill (all 100% curbside recyclable!). Store the gel packs in your freezer and reuse to keep your next picnic or road trip fare cool.

This is a fresh Spanish-style chorizo made using traditional Basque-inspired recipes that emphasize balance, pork quality, and clean spice. Crafted from coarsely ground pork and seasoned with smoked paprika, garlic, and salt, this uncured sausage delivers classic chorizo flavor with a vibrant, savory character designed specifically for cooking.

Because it is sold raw, this chorizo is meant to be fully cooked before eating, allowing the paprika-rich seasoning and natural pork juices to bloom during preparation. It performs especially well grilled, sautéed, or roasted, and is a natural fit for dishes like huevos con chorizo, paella, stews, sandwiches, or sliced and served alongside roasted vegetables. The texture stays juicy and robust, with warmth from the spices rather than aggressive heat.

Quijote Food was founded by Basque sportsmen who brought their homestyle chorizo-making traditions to Miami in the 1980s. Today, the family-run company continues to produce Spanish-style chorizo that honors regional tradition while meeting modern USDA production standards.
