This excellence comes from the pigs’ natural lifestyle in Spain’s oak-filled dehesas, where they roam freely and feast on acorns, resulting in meat that’s deeply flavorful, nutty, and nutrient-rich. Iberico pork is particularly prized for curing, a process that enhances its already complex character.
At Dehesa Cordobesa, Iberico pigs are raised on 40,000 hectares of forested land near Cordoba, where tradition, terroir, and care come together to produce pork of extraordinary quality. This chorizo is dry-cured with no added nitrates or nitrites. It’s flavored with smoky, spicy paprika, which perfectly complements the rich, unctuous pork. Enjoy it on its own, in a sandwich with a Spanish cheese like Manchego, or with Marcona almonds on a charcuterie board.
