Ferdinand Schaller was an apprentice butcher in Germany before making his way to America in 1937, where he teamed up with Tony Weber to open a butcher store that would become an NYC institution. Schaller & Weber is known for crafting Old World specialties with a New World aesthetic, such as this Chicken Liver Pate. Substituting lean poultry for pork, it boasts a hint of sea salt and Armagnac—a 10th century French brandy— for full-bodied flavor, and is perfect for adding to holiday charcuterie boards, or including as part of a Hanukkah meal.
