Chabichou du Poitou is a celebrated French goat cheese with a history dating back to the eighth century. Produced in the Poitou-Charentes region, just south of the Loire Valley, this cheese is crafted from pasteurized goat’s milk collected from seven local dairies before being aged by skilled affineurs. Its distinctive cylindrical shape and delicately wrinkled rind come from the use of Geotrichum candidum, a traditional cheesemaking mold. Awarded AOP (Appellation d’Origine Protégée) status in 1996, true Chabichou can only be produced in limited regions of France, ensuring authenticity and quality.
This artisanal cheese has a creamy texture with bright, zesty flavors that reflect the lush, grassy pastures where the goats graze. Lemon zest and earthy mineral notes define its profile, making it a rare bloomy rind goat cheese that pairs beautifully with both white and light red wines.
