Iio Jizo, founded in 1893, is renowned for producing some of the highest-quality rice vinegar in Japan. Run by 5th-generation owner Akihiro Iio, Iio Jizo uses only 100% new-harvest pesticide-free rice to make their vinegar, which takes more than a year to produce from start to finish, with sake that’s brewed in-house using old-world techniques dating back hundreds of years. Their purple sweet potato vinegars are also made according to the same sake-making process.
