The pork is fermented and aged for three months in a dry room, allowing the flavors to deepen and meld with the earthy intensity of the truffles. A touch of French brandy and carefully balanced spices rounds out the profile, creating a salami with a deeply aromatic nose, a silky texture, and an unmistakable truffle finish.
Founded by Pascal Besset—a French charcutier with decades of culinary experience—Angel’s Salumi and Truffles brings European craftsmanship to the American market with a focus on quality and authenticity. Their charcuterie is made from humanely raised, antibiotic- and hormone-free pork, with no MSG, gluten, or added nitrates.
