It’s seasoned with fennel, red wine, grappa, and a blend of spicy chili, then encased in a natural pork casing that preserves its authentic character and minimizes acidity. The result is a well-balanced, spicy salami that’s rich, fragrant, and full of character.
This Soppressata pairs beautifully with Pinot Grigio, Pinot Noir, or rosé wines, as well as amber ales and IPAs. It’s excellent alongside Manchego or herbed goat cheese, and works well on antipasto boards with Marcona almonds, figs, or grapes.
