Bernina beef bresaola is a thinly sliced, air-cured specialty inspired by the historic traditions of Valtellina, the alpine region near the Swiss-Italian border where bresaola originated over 500 years ago. Crafted from carefully selected lean beef cuts and seasoned with salt, spices, berries, and aromatic mountain herbs, it follows time-honored curing methods designed to preserve tenderness and develop a delicate, refined flavor.
Produced in Uruguay using beef from cattle raised on open green pastures without hormones, growth promoters, or animal protein feed, the bresaola combines natural meat quality with Italian salumeria expertise. Aged for up to three months, it develops an intense, uniform red color and a tender, flexible texture that melts in the mouth. Its flavor is soft yet defined, lightly spiced, and exceptionally lean, making it rich in protein while low in fat and calories. Thinly sliced and ready to serve, it pairs beautifully with arugula, Parmigiano Reggiano, olive oil, and lemon.
Developed in collaboration with Salumificio Menatti of Valtellina, a certified producer of Bresaola della Valtellina IGP, Bernina Bresaola respects traditional alpine methods while applying modern quality systems including HACCP and Standard Goods Practices.
