Made from sweet Banyuls wine and aged in oak barrels for five years, this vinegar strikes a beautiful balance between bright acidity and rich, developed flavors like dried fruit, spice, and caramel. Compared to a 10-year Banyuls vinegar, it’s lighter and fresher, with more vibrant grape notes and a slightly sharper finish—perfect for dishes that call for finesse without overwhelming richness.
Banyuls is a fortified wine crafted mainly from Grenache grapes grown on sun-soaked terraces overlooking the Mediterranean. Naturally sweet and slowly oxidized in barrels, it transforms over time into a vinegar with extraordinary depth.
