For three generations, the Barbieri family of Modena has been producing Del Cristo Aceto Balsamico Tradizionale (genuine balsamic vinegar). Made according to historic family customs and conforming to strict D.O.P. guidelines, Del Cristo Balsamico is masterfully crafted, from start to finish. Each year the family harvests the grapes from their own vineyard, cooks the unfermented grape juice (the "must") over an open flame and carefully filters and rotates the concentrated vinegar from one increasingly smaller wood barrel to the next. These casks are stored in a vinegar loft (called an acataia) where for a minimum of 25 years, the vinegar continues to grow more complex.
Also, by DOP law, before it is bottled, a panel of expert tasters must judge each lot of vinegar. Only then is it awarded the label "Tradizionale." Artful and refined, Del Cristo Balsamico of Modena has all the qualities revered in true balsamic vinegar: complex woody bouquet, a flavor reminiscent of fruit (tart, but pleasantly sweet), and a dense, syrupy consistency. Packaged in consortium-authorized glass bottles created by Italian designers and gift boxed.
Aceto Balsamico Tradizionale di Modena is fabulous on fresh, grilled, steamed, or boiled vegetables. It also adds a refined addition to fish and meat dishes, whether broiled, baked, boiled, or grilled.
