The sweet rich apricots and ripe lemon orange flavored Valencia oranges that grew in the trees near my Bonnie's home in California motivated her to create this vibrant orange colored jam. The delightfully contrasting flavors of sweet and citrus make this jam spirited and satisfying.
This jam makes a wonderful glaze for roast chicken, duck or pork. For an astonishing risotto, be daring and add a dollop to the mixture.
