This andouillette is a deeply traditional French sausage rooted in the charcuterie of eastern and central France, most famously associated with Troyes in the Champagne region. Made from pork chitterlings, pork stomach, and pork meat, it follows classic preparation methods that celebrate bold flavor and rustic texture rather than refinement.
