Anasazi beans are a beautiful heirloom variety known for their distinctive burgundy-and-white speckled appearance and mildly sweet, slightly nutty flavor and firm texture. Cultivated by the Ancestral Puebloans in the American Southwest for centuries, these beans cook faster than many other dried beans and don’t require overnight soaking.
