GeoMar has taken all the work out of enjoying abalone! The company uses divers to capture the prized white mollusk in the wild, from the cold and clean waters of the Southern Chilean coast. Also known as “locos,” the abalone is processed in cans immediately upon harvest using the newest technology, in order to perfectly preserve its firm texture and sweet ocean flavor. Simply sautee with garlic for as a hot topping for bruschetta or cold seafood salad, or feature in a cioppino-like stew called “chupe,” a beloved Chilean national dish.
