Move over, ramen. While Twin Marquis made its name crafting Chinese staples, the 30-year-old Brooklyn-based business has since expanded to encompass Asian specialties of all sorts. And that includes Japanese Yakisoba, a thin and springy noodle that’s similar to ramen, but more commonly used in stir-fries instead of soups. Literally translated to “fried buckwheat” in Japanese, the tender yellow noodles are actually crafted from wheat flour. And they’re a large part of the reason that Twin Marquis runs through 15,000 tons of flour each month, and produces enough noodles yearly to wrap the Earth’s circumference 100 times! Take a cue from the company by trying their recipe for Kimchi Bacon Omu-Soba. Essentially an omelet wrapped around noodles stir-fried with bacon, kimchi, onion, and scallion, it’s a Japanese street cart favorite!
