- Barely Buzzed by Beehive Cheese: Barely Buzzed from Beehive Cheese (Utah) was an instant megahit, a Cheddar-style cheese rubbed with a unique blend of ground espresso beans and lavender. Aged for six to eight months, the cow’s milk cheese absorbs the captivating scents of the rub and develops its own aromas of butterscotch and caramel. It melts in your mouth. Beehive Cheese is a partnership between two brothers-in-law who traded fast-paced careers and grinding commutes for a simpler life as cheesemakers. The creamery specializes in Cheddar and its creatively flavored Cheddars, like Barely Buzzed, are widely imitated but rarely equaled. A six-time blue-ribbon winner at the American Cheese Society competition. Pair with a porter or stout. (7.5 oz)
- Willoughby by Jasper Hill Farm: Willoughby from Jasper Hill Farm (Vermont) was the creation of Ploughgate Creamery, which ceased production after a creamery fire in 2010. With the original cheesemaker’s blessing Jasper Hill resurrected this pudgy little washed-rind cheese and has continued to develop the recipe. Peaking in flavor and texture at eight to nine weeks, this buttery cow’s milk disk is supple and silky, with seductive aromas of peat, garlic, roast beef and roasted onion. The rind is thin, edible and rosy orange, a crunchy contrast to the oozy interior. Pair with a saison or sour beer. (8 oz)
Cabra La Mancha by FireFly Farm: Cabra La Mancha from Firefly Farm (Maryland) is a three-month-old goat cheese inspired by the aged cheeses made in the Spanish Pyrenees. It’s repeatedly washed with brine as it ages, giving it the golden crusty rind and highly aromatic interior, like a goat’s milk version of Munster. The pale interior is semisoft and smooth and the flavor delicious funky, for those who like cheese with big personalities. A totally unique creation and a great melter. Just imagine what it would do for a grilled cheese sandwich! Pair with a Belgian-style pale ale or tripel. (7.5 oz)
