These refreshing pickle chips have a cucumber salad quality, since they’re hand-packed with thin slices of sweet, crunchy onion. And because they practically double as a side dish or condiment, you can pile the pickles on top of pulled pork sandwiches instead of slaw, or spoon over mild white fish as a play on Filipino escabeche. That said, the pickle chips are incredibly enjoyable all on their own! That’s because the Philly-based founders of Fishtown make them exclusively from fresh and locally-sourced kirbys, and use the entire cucumber in order to reduce waste.
