Queso Menonina originated from the Mennonite communities from Manitoba and Saskatchewan in Canada who settled in the State of Chihuahua in the 1920s. They brought with them their cheese making techniques to Northern Mexico. Today, Queso Menonina is a staple in the fridge for Mexican cooking and whenever you need a rich melting cheese. Perfect shredded over nachos, enchiladas, beans, quesadillas, chiles rellenos and queso fundido. Melts well for fondues, pizza, lasagna and casseroles too.
Paula Lambert is a renowned cheese maker and author of The Cheese Lover's Cookbook. In 1982, she founded the award-winning Mozzarella Company, a small cheese factory in Dallas. Today, the company produces some of the best Hispanic-influenced cheeses this side of the border.
