The Quartet of Favorite Cheeses Assortment was curated by renowned cheese experts Janet Fletcher and Laura Werlin. To support and celebrate American cheese makers, Janet and Laura have collaborated on Cheese O'Clock, a series of live, virtual cheese and wine tastings. View a recording of the event at JanetFletcher.com

Assortment includes:

  • Blackberry Farm Brebis - Brebis is a fresh, buttery sheep’s milk cheese, only a few days old, produced in the same way as a fresh chèvre. It is rich and creamy, while being light on the tongue. Slather Brebis on toast or crackers with a favorite honey or jam or drizzle it with extra virgin olive oil and serve with charcuterie.
  • Firefly Merry Goat Round Spruce - The cheesemakers at Firefly Farm were looking for a new way to age their renowned Merry Goat Round. In collaboration with World Central Kitchen Founder and chef José Andrés, they decided to wrap it with spruce bark to better support the wheel as it ripened. Necessity turned to art after they realized that the spruce imparted a rich woodsy aroma to the cheese. This cheese won a Good Food Award in 2018 and a perfect score at the American Cheese Society Judging and Competition in the same year. The interior is silky and rich with notes of mushroom and umami.
  • Appalachian by Meadow Creek Dairy - Appalachian is a raw cow’s milk farmstead cheese, aged for at least ninety days in the Meadow Creek cellars. It develops a dusting coat of white mold and aromas of warm cream, butter and mushrooms. The texture is velvety, melting on the tongue, yet firm enough to be a standout table cheese.
  • Gold Hill by Haystack Mountain -Spanish/Portuguese style cheese similar to its big brother, the Queso de Mano, but made with pasteurized goat milk and additional cultures to bring out a balanced buttery and tangy aroma. This firm natural rind is aged for six to twelve months, which allows it to develop its nutty, earthy notes. Gold Hill not only took home a Super Gold at the 2017-18 World Cheese Awards in London, England but also won the award for the Best American Cheese.

This all-star lineup of some of Janet’s and Laura’s favorite cheeses will provide enough for four people to enjoy the live tasting, or for two people with leftovers. Enjoy this superb tour of high-level American cheesemaking, representing a variety of milk types, styles and regions.
