Crafted from raw wheat flour, with a bright yellow color, bouncy and chewy texture and thick tubular shape, lo mein remains one of their best-sellers. Literally translated as “stir noodle” in Cantonese, the name derives from its most popular preparation method. Toss par-boiled noodles in a steaming hot wok with napa cabbage, chives, shredded carrot, snow peas, broccoli florets, and mushrooms, then season with a sauce of black vinegar, sesame oil, and soy.
