Each cheese is made in a small batch and named from Boontling, a unique language that originated in Boonville and the surrounding hills at the end of the 19th century. The cheeses are a unique mix of goat and sheep milks; a blend that changes with the seasons from nearly 20% sheep milk at the start of the year to 100% goat milk in the fall and winter, when the sheep stop milking. Each cheese type is unique as it highlights the daily and seasonal variation of the milk. Laychee is a testament to the dynamic changes of the seasons and milk. Serve the Laychee with a crisp glass of dry Rose or Gewürztraminer and alongside a platter of fresh crudites, marcona almonds and crostini.

How We Ship
