Juniper Berries are the fruit of an evergreen shrub (Juniperus communis) which grows wild throughout most of the northern hemisphere. It takes two years for the berries to ripen to a dark blue, at which time they are ready to pick. Use them slightly crushed, alone or with their companion herbs, in stuffings, or in marinades for pork, venison, quail, Cornish game hen, and other fowl or game. Crush them with salt and garlic for use in pates.
