Rising 350 feet above the Kickapoo River are the Ocooch Mountains. Named for a small band of Native Americans called the Ocooch, the origins of the word Ocooch can be traced to the sustenance provided by the Kickapoo to the Indians. And so this alpine-style, raw milk cheese is a fitting tribute. Aged 3-4 months, this dense, nutty, slightly grainy cheese has a natural rind which is washed during aging. You might even say it’s a bit of a sheep’s milk salute to a great Gruyere.

The Hidden Springs Farm is located in Southwestern Wisconsin in an area that’s different from the rest of the state. They call it the "Driftless Region" because the glaciers didn’t ramble through, leaving behind their familiar clutter of sand, rock and silt, or "drift." The carved hills and valleys make it ideal for pasturing animals. It is the perfect environment to raise dairy sheep.

The Hidden Farm Creamery is a small company and they believe people want to know where their food comes from. They care for the herd and make their sheep’s milk cheeses in ways that are harmonious with the people and farms that surround them. From the very beginning they planned to run a sustainable environmental and financial farm.

They have draft horses for the fields instead of a tractor. They don’t use fertilizers or pesticides. The sheep are fed pasture-grazed natural grasses and are humanely treated. At Hidden Springs Farm they believe the rich, unique flavors of their handcrafted farmstead sheep’s milk cheeses are enhanced by the deliberate way they care for their sheep, the land, and the community they call home.
