Take a break from takeout. While Twin Marquis made its name crafting Chinese staples such as noodles and wonton wrappers, the 30-year-old Brooklyn-based business has since expanded to encompass Asian specialties of all sorts. And that includes ready-to-eat items like Japanese gyoza. Boasting thin skins and savory fillings such as pork with napa cabbage or chive, they’re a large part of the reason that Twin Marquis runs through 15,000 tons of flour each month! To prepare, simply pour about 6 tablespoons of water into a wok or nonstick pan. Add 6 frozen gyoza at a time to the pan, cover, and cook over high heat for about 4 minutes, or until most of the water has evaporated. Add 1 tablespoon of oil to the pan, cover, and fry over medium heat for about 3 minutes, or until the gyoza develops a rich brown color on one side. Serve with your favorite dipping sauces, such as chili oil or soy.
