Gold Hill was created by Jackie Chang, The Haystack Dairy cheesemaker, and named for one of the original gold strikes in north-central Colorado. It is a Spanish/Portuguese style cheese similar to its big brother, the Queso de Mano, but made with pasteurized goat milk and additional cultures to bring out a balanced buttery and tangy aroma.
This firm natural rind cheese is aged for six to twelve months, which allows it to develop its nutty, earthy notes. Gold Hill not only took home a Super Gold at the 2017-18 World Cheese Awards in London, England but also won the award for the Best American Cheese.
As versatile in the kitchen as it on the table, you’ll find Gold Hill a delicious domestic stand-in for Spanish and Italian imports. Gold Hill won a first-place award at the American Cheese Society contest in 2017.
Serving suggestions: Makes a mean pesto, or grate or shave onto pasta, potatoes, salads, eggs, or vegetables. Melt in sandwiches, macaroni and cheese, or casseroles. Whip up a soufflé. On the cheese plate, pair with smoked meats, olives, and toasted nuts.
Pairing suggestions: Heifeweizen, or light-to full-bodied red wines such as Tempranillo or Garnacha, or spicy Spanish rosé.
