Carrie Routh Bradds and Bobby Bradds partner with local family farms who supply fresh quality goat and cow milk to carefully craft their award-winning line of artisan cheeses. Aged for three months, the Providence by Goat Lady Dairy is a goat's milk cheese that evolved as an experiment of a Tallegio style cheese. While the natural rind has been washed and turned by hand similar to it's traditional counterpart, the Providence develops a beautifully dense and drier texture with delicious undertones. This 2019 ACS award-winner is a true example of a farmstead cheese crafted in a uniquely American way. The Providence can be used as you would with a Manchego, Pecorino and Parmigiano Reggiano and grates beautifully in salads and over pastas.
