Fiscalini's aged cheeses are made by hand from the finest milk in California - produced from their very own contented cows, and aged in a special aging rooms, then watched over by master cheesemaker Marino Gonzalez. All their cheeses are made as they would be in Europe. Each wheel is a labor of love, delicately made by hand in open vats, where the talented cheesemakers' dedication and experience determine the outcome of the final product. All Fiscalini cheeses are produced on the almost 100 year-old family-owned dairy farm. Amazingly, they produce the electricity to run the entire farm with an anaerobic digester that produces methane as a fuel, from cow manure and other waste products.
