Esquirrou is hand-crafted in the Pyrénées region of France, using the milk of Manech ewes that graze in this beautiful region. This gorgeous cheese is crafted at the Mauleon Fromagerie, from the rich milk of black or red-raced Manech ewes grazing in the Pays Basques region in the southwest of France. Esquirrou ages for six months and underneath its amber rind lies a rich ivory past with nutty notes and a toasted wheat aroma. It is a PDO Cheese, Protected Denomination of Origin, made traditionally and following strict process. Cheese connoisseurs traditionally pair it with cherry preserves, but we also love it sliced thinly and accompanied with fruit, nuts and rustic bread.
