Larry Hedrich of LaClare Creamery had the idea to make an aged, clothbound version of their award-winning Chandoka and began working with Chicago-based Standard Market to make this dream a reality. In 2017, an on-site aging cave was built and the rest is history. The Cave Aged Chandoka is a blend of 70% cow and 30% goats milk, all sourced locally near the creamery in Malone, WI. Made in the style of a New Zealand Cheddar, the pasteurized milk blend is bound in cloth and aged in caves on-site for 8 months, developing the most unique flavor profile and texture. The result is a rich and dense cheese with a fudgy interior and complex and vegetal flavor that evolves as the cheese ages. The Cave Aged Chandoka tastes of butter and lemon with grassy, hay undertones. This beautifully crafted cheese is one to experience! Taste alone, serve with charcuterie and grapes or shave over fresh greens for an added dose of flavor.
