Named for the scenic bluff overlooking the picturesque village of Grafton, Vermont, Bear Hill is a stunning washed-rind cheese handmade in small batches and carefully matured in Grafton Village Cheese's cave aging facility. This alpine-style cheese is made with raw sheep's milk collected from small family farms. Whole wheels of Bear Hill are washed and carefully aged for a span of 10-12 months to develop its unique taste and flavor profile. The hue of the rind ranges from pale tan to a rustic brown, with pleasant aromas of browned butter and hazelnut. The cheese has a nutty and sweet alpine taste with a fruity complexity that blossoms from the sheep's milk. Bear Hill is firm, but pliant and creamy on the tongue with a savory finish that leaves you wanting more.
This cheese melts well and is best served as a table cheese to enjoy all the wonderful nuances of flavor. Enjoy Alpine-style with a slice of ham and butter on baguette or pair with pickles and a sweet mostarda. Pair with aromatic, spicy whites and reds such as Viognier, Chenin Blanc and Cote du Rhone. Serve with an IPA or French cider.
