Artikaas Hatch Chile Gouda, or Chilikaas, proves that two traditions can be better than one. This cheese marries buttery Youngsters Gouda with bold Hatch chiles. Youngsters is made exclusively with “first milk,” the milk cows give when they first roam the spring meadows after wintering indoors. Youngsters Gouda is exceptionally buttery, rich and sweet—the perfect backdrop for fiery, flame-roasted Hatch chiles. This cheese melts beautifully, and is perfect for nachos, burgers and tamales, as well as simply presenting on a cheeseboard.
