Tomme de Brebis is made using the same Laucaune sheep’s milk, sourced from local Aveyron farmers, to create these wheels. Tomme de Brebis is pressed and matured for 6 months to develop its caramel-colored rind and smooth, compact ivory-colored paste that practically melts on your tongue. A fruity and buttery cheese with a mild lanolin flavor. This is a star on your cheese board served with cherries in any form, from fresh to preserves to alcohol laced Griottines. You can also enjoy this in a grilled cheese, quiche, soup or gratin.
